Sobre Masa, translated from Spanish as “About Masa,” is a nod to “sobremesa,” the conversations shared over the table after a meal. “Masa” translates to corn dough, embodying our commitment to sparking discussions about the significance of corn and its impact on Mexican cuisine and culture. We strive to inspire these conversations during your visit to our restaurant or while enjoying our products.

Sobre Masa was founded with the purpose of promoting the land, farmers, and seeds of Mexico. As Mexican chefs in NYC, we encountered a problem: the lack of quality tortillas. In our quest to perfect the tortilla, we delved into the social and economic impact of heirloom corn. Sobre Masa was born from our desire to share the stories behind the diversity of Mexican corn and the dedication of those who grow it. We believe that working with heirloom seeds will not only produce the best tortillas but also restore the authentic flavors of Mexico.
